Recipe: Healthy Blueberry Breakfast Muffins

Directions:

  • Preheat oven to 350°F and line a muffin tin.
  • In a bowl, mix dry ingredients.
  • In a separate bowl, whisk eggs, applesauce, honey, and vanilla.
  • Combine wet and dry ingredients gently.
  • Fold in blueberries.
  • Divide into muffin cups and bake 18–22 minutes, until set.

Ingredients:

  • 1½ cups almond flour (or oat flour)
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 2 eggs
  • ¼ cup unsweetened applesauce
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • ¾ cup fresh or frozen blueberries
